I've also started using a no-knead white bread recipe for my Hubby's sandwiches and that works great (he thinks wheat is poison). I have the recipe my mom used too, the one with baked potato in it, but it takes a few more hours to make. <BR/><BR/>I forgot to mention that you can easily let the bread rise in the refrigerator overnight for either of the risings, just as long as you let it come to room temp before kneading or baking.
